Every year, the Nouvelle-Aquitaine departments of Dordogne, Gironde and Lot-et-Garonne produce between 8 and 9 tonnes of truffles out of the (approximately) 35 tonnes produced in France. So why are they called black diamonds? Primarily as a result of their rarity, and therefore their high price! Truffles sell at between €650 and €700 per kilo (all categories).
Their delicious flavour comes at a price!
The emphasis is very much on freshness, terroir and authenticity.
Come to gather some great recipe ideas (truffle omelette, truffle risotto, etc.) and feast on the delicious black diamonds.
