Pavlovas aux fraises crème fouettée à la vanille

Recipe: Strawberry pavlova with vanilla-flavoured whipped cream

During spring and summer, don’t miss out on one of the region’s best-loved products: strawberries! Whether they’re from Périgord, Beaulieu or Lot-et Garonne Label-Rouge, treat yourself to its freshness and ever-so sweet delight!
To exalt strawberries here is a classical recipe: Pavlova, this crispy-crunchy meringue, covered with whipped cream and topped with fresh fruit: indulge!

Ingredients / for 8 people

For the meringue:
240 g egg whites (i.e. approx. 6 large eggs)
400 g caster sugar
A few drops of lime juice

For the whipped cream:
20 cl very cold liquid cream
1 heaped tablespoon fresh cream
1 tablespoon icing sugar
One vanilla pod

For the fruit:
250 g de Gariguette strawberries
A few leaves of mint
Grated zest of a lime

Preparation

Prepare the meringue: Preheat the oven to 90°C. Whisk together the egg whites, lime juice and 1 tablespoon caster sugar slowly to mix them well. Then pour in the rest of the sugar in one go. Whisk on top speed for a few minutes until you obtain a smooth, shiny meringue.
On a sheet of baking paper, make 8 discs of about 15 cm diameter using a spoon or an icing bag. They must be thick enough to be able to make a small hollow in their centres. Cook for 1h at 90°C then another 1h at 85°C. Leave to cool down completely on a grill.

Prepare the cream: Slice the vanilla pod in half and remove the seeds. In a very cold large bowl, whisk together the liquid cream, the fresh cream, the icing sugar and the vanilla until you obtain a light, fluffy cream. Place in the fridge.
Hull the strawberries, cut them in half if they are too big.

Assembling: Make sure your meringues have totally cooled down. Place 2 big spoonfuls of vanilla-flavoured whipped cream on each meringue disc. Place the fruit on top of the cream. To decorate, chop up a few mint leaves and grate the lime zest then sprinkle over the pavlova to add a touch of freshness.

Brossac village

Come and discover the village of Brossac ! A charming little village, nestled on a hill, whose origins date back to antiquity. This village of 500 inhabitants shelters the vestiges of a villa and a Gallo-Roman aqueduct.
Their presence results from an ancient Roman road, passing nearby, linking Saintes to Périgueux. Built in the 2nd century BC, these ruins have been classified as Historical Monuments since 1875.

Among the other listed monuments to visit, you will find the church Notre-Dame de Brossac. This 12th century Romanesque building was attacked several times during the Hundred Years War. Notre-Dame-de-la-Nativité Church

The Church of Notre-Dame-de-la-Nativité was built in the 12th century. This Romanesque monument has been considerably altered over the years, so that only the foundations are original today.
The walls, for example, were raised shortly after the Hundred Years' War to allow for the construction of refuge rooms in the attic. The Romanesque facade, on the other hand, was reworked during the Gothic period.

The use of grison, a local grey stone that is very common in this part of the Charente, limited the sculpted decoration to its strictest expression, as this stone is unsuitable for sculpture. On the other hand, the church has a painted fresco, rediscovered in the sanctuary during restoration work.

Like all medieval churches, Notre-Dame de Brossac was once surrounded by a cemetery, which was abandoned in 1843. On the outside, in the north wall of the nave, two funerary vaults remain, intended to house the burial of high-ranking.

Saint-Pierre Church of Passirac

The parish church of Saint-Pierre de Passirac, built in the 11th century, was a former Benedictine priory. Its Romanesque architectural decoration gives it a unique character and style.
Arcades and colonnades, carved all around the building, brighten up the monument and remind us of the importance of the church at that time. The bell tower is not of the period. It was rebuilt in the late 16th and 19th centuries.

During your visit, you should not forget to admire the capitals of the dome and the choir with their unique carved decorations. A processional banner dedicated to "The Virgin and Child" (20th century) hanging in one of the transoms is also visible. Opposite it is possible to admire a painting entitled "The Deploration of Christ".

Not far from there is the fountain of Saint-Pierre de Passirac (which most likely gave its name to the church). Its water, reputedly miraculous, was used to cure boils. The source of this fountain once flowed inside the church of Saint-Pierre.

Gîte La Fleurette is a former farm-worker's cottage.
The main room is large and benefits from exposed beams, rustic fireplace and a wood stove. The furnishings are comfortable and there is a TV with satellite channels and a DVD player. The open kitchen is fully equipped, has a cooker with oven, microwave, fridge and dishwasher and a dining table with 6 chairs.

There are 3 bedrooms in the main gîte which can sleep up to 6 people. (There is also a separate annex with a double bedroom and private bathroom that can be rented by separate agreement) The Garden Bedroom has patio doors to the garden, the Stable Bedroom is a rustic room with access via a few steps and features in a sitting area in the old bread oven ; it has a double bed. The other bedrooms have two single beds wich can also form a double bed as requested when booking. The Garden Bedroom can accomodate a cot. The bathroom has a shower, basin and w-c. Central heating. Bed linen, bath and kitchen towels are included in the price. Pool towels can be hired. La Fleurette has its own terrace garden with garden furniture and barbecue, from which you have views over the valley and the village of Brossac.

Gîte l'Écurie is a barn conversion. The main room is large and benefits from a wood-burning stove.
The furnishings are comfortable and there is a TV with satellite channels and a DVD player. High-speed Wi-Fi is provided for free. The kitchen is fully equipped and has a cooker with oven, microwave, fridge and dishwasher. There is a separate dining room and games room with pool/snooker table.

The three spacious bedrooms can accomodate 9 people. Bedroom one has a double bed, bedroom 2 has 4 single beds (these can be converted into two double beds), bedroom three has a double bed and a single bed. There are three bathrooms each with a shower, basin and toilet (en suite to bedrooms 2 and 3). The private bathroom for bedroom 1 has a sunken bath with shower.

Bed linen, bath and kitchen towels are included in the price. Pool towels can be hired.

Gîte l'Écurie has its own terrace garden with garden furniture and barbecue, from which you have views over the valley and the village of Bardenac.
