A visit to the markets of the area will give you all the ingredients you need for this traditional recipe : chickens, onions, carrots, turnips, stuffing… not to mention some informed advice from local producers about how to go about it.
If it’s more your thing to put your feet under the table than slave over a hot stove, all you have to do is visit one of the 56 participating restaurants to savour the famous stuffed chicken stew. There’s enough choice on offer to satisfy purists and those who like their cuisine revisited.
During the week-long festivities, around 20,000 plates will be served in the city of Pau and its surrounding region: a fitting birthday banquet for Henri the Great!
