Pavlovas aux fraises crème fouettée à la vanille

Recipe: Strawberry pavlova with vanilla-flavoured whipped cream

During spring and summer, don’t miss out on one of the region’s best-loved products: strawberries! Whether they’re from Périgord, Beaulieu or Lot-et Garonne Label-Rouge, treat yourself to its freshness and ever-so sweet delight!
To exalt strawberries here is a classical recipe: Pavlova, this crispy-crunchy meringue, covered with whipped cream and topped with fresh fruit: indulge!

Ingredients / for 8 people

For the meringue:
240 g egg whites (i.e. approx. 6 large eggs)
400 g caster sugar
A few drops of lime juice

For the whipped cream:
20 cl very cold liquid cream
1 heaped tablespoon fresh cream
1 tablespoon icing sugar
One vanilla pod

For the fruit:
250 g de Gariguette strawberries
A few leaves of mint
Grated zest of a lime

Preparation

Prepare the meringue: Preheat the oven to 90°C. Whisk together the egg whites, lime juice and 1 tablespoon caster sugar slowly to mix them well. Then pour in the rest of the sugar in one go. Whisk on top speed for a few minutes until you obtain a smooth, shiny meringue.
On a sheet of baking paper, make 8 discs of about 15 cm diameter using a spoon or an icing bag. They must be thick enough to be able to make a small hollow in their centres. Cook for 1h at 90°C then another 1h at 85°C. Leave to cool down completely on a grill.

Prepare the cream: Slice the vanilla pod in half and remove the seeds. In a very cold large bowl, whisk together the liquid cream, the fresh cream, the icing sugar and the vanilla until you obtain a light, fluffy cream. Place in the fridge.
Hull the strawberries, cut them in half if they are too big.

Assembling: Make sure your meringues have totally cooled down. Place 2 big spoonfuls of vanilla-flavoured whipped cream on each meringue disc. Place the fruit on top of the cream. To decorate, chop up a few mint leaves and grate the lime zest then sprinkle over the pavlova to add a touch of freshness.

Saint-Félix Church

The church of Saint-Félix, located in the village, is a Romanesque church dating from the 12th century. It has many sculpted motifs on its façade (typical of the Charente region) and inside: geometric shapes, foliage, animals, characters, monsters, etc.
It used to belong to the former diocese of Saintes. During the Hundred Years' War, the church was damaged. Around the 19th century, work began to restore the walls of the nave and the bell tower.



The church of Saint-Félix has been classified as a "Monument Historique" since 1984. Its bell, dating from 1613, has also been classified as an object since 1944.

Beware, on this stage, you will realise that in the South Charente, there can also be a difference in altitude... Successions of rapid ascents and descents of paths under vegetation, beautiful residences and interesting viewpoints.
Electrically assisted mountain bikes are welcome here. The difference in altitude is significant on this section. Keep your reserve and face the hills with humility. They follow one another one after the other.

Saint-Pierre Church of Passirac

The parish church of Saint-Pierre de Passirac, built in the 11th century, was a former Benedictine priory. Its Romanesque architectural decoration gives it a unique character and style.
Arcades and colonnades, carved all around the building, brighten up the monument and remind us of the importance of the church at that time. The bell tower is not of the period. It was rebuilt in the late 16th and 19th centuries.

During your visit, you should not forget to admire the capitals of the dome and the choir with their unique carved decorations. A processional banner dedicated to "The Virgin and Child" (20th century) hanging in one of the transoms is also visible. Opposite it is possible to admire a painting entitled "The Deploration of Christ".

Not far from there is the fountain of Saint-Pierre de Passirac (which most likely gave its name to the church). Its water, reputedly miraculous, was used to cure boils. The source of this fountain once flowed inside the church of Saint-Pierre.

A last minute change in the weather? The village of Sainte-Souline offers a shelter and a picnic table for lunch. There is plenty of room for parking.
A parking lot is available free of charge in front of the town hall, as well as a tap to cool off during hot weather. Once you have found the sun, you can visit the Sainte-Souline church, located in the old town.

Sainte-Souline Church

Romanesque church built in the 12th century. It suffered heavy losses during the Wars of Religion. It was redesigned in the 14th century, as well as in 1843 when the vaults of the nave were redone. The presbytery dates from 1668.
