Pavlovas aux fraises crème fouettée à la vanille

Recipe: Strawberry pavlova with vanilla-flavoured whipped cream

During spring and summer, don’t miss out on one of the region’s best-loved products: strawberries! Whether they’re from Périgord, Beaulieu or Lot-et Garonne Label-Rouge, treat yourself to its freshness and ever-so sweet delight!
To exalt strawberries here is a classical recipe: Pavlova, this crispy-crunchy meringue, covered with whipped cream and topped with fresh fruit: indulge!

Ingredients / for 8 people

For the meringue:
240 g egg whites (i.e. approx. 6 large eggs)
400 g caster sugar
A few drops of lime juice

For the whipped cream:
20 cl very cold liquid cream
1 heaped tablespoon fresh cream
1 tablespoon icing sugar
One vanilla pod

For the fruit:
250 g de Gariguette strawberries
A few leaves of mint
Grated zest of a lime

Preparation

Prepare the meringue: Preheat the oven to 90°C. Whisk together the egg whites, lime juice and 1 tablespoon caster sugar slowly to mix them well. Then pour in the rest of the sugar in one go. Whisk on top speed for a few minutes until you obtain a smooth, shiny meringue.
On a sheet of baking paper, make 8 discs of about 15 cm diameter using a spoon or an icing bag. They must be thick enough to be able to make a small hollow in their centres. Cook for 1h at 90°C then another 1h at 85°C. Leave to cool down completely on a grill.

Prepare the cream: Slice the vanilla pod in half and remove the seeds. In a very cold large bowl, whisk together the liquid cream, the fresh cream, the icing sugar and the vanilla until you obtain a light, fluffy cream. Place in the fridge.
Hull the strawberries, cut them in half if they are too big.

Assembling: Make sure your meringues have totally cooled down. Place 2 big spoonfuls of vanilla-flavoured whipped cream on each meringue disc. Place the fruit on top of the cream. To decorate, chop up a few mint leaves and grate the lime zest then sprinkle over the pavlova to add a touch of freshness.

Le safran de Cornelius is a saffron producer located in the Charente, on the heights of the beautiful village of Montboyer. They produce and sell saffron pistils but also jams, chutney, vinegars and mustards.
Reception at our saffron plantation: discover the taste of organically, home made products. Saffron-flavoured chutneys, jams, mustards, vinegars, syrups, honey, salt and of course saffron.

Meet us on Friday afternoon ! Please call before coming to make sure we are around, for we might be in production or away at some market.

Cognac Decroix bio

All the resources needed by the vines are present in nature. It is entirely up to the wine grower, the craftsman of his wine, to use these resources to reveal the unique qualities of the soil.

It is what Jean-Francois Decroix has practised on his vineyard since by producing cognac and pineau.
This means autonomy and independence of the vineyard with no reliance on external contributory sources. This is made possible thanks to additional crops produced from August to May which provide the physiological needs of the vines throughout the year.



The grape naturally contains the yeasts which transform sugar into alcohol during the wine making process. The wine obtained, once distilled in the traditional charentaise way, will turn into the famous cognac brandy. A slow ageing, in oak barrels made from local wood, will give the final product its so typical taste of cognac. By his research work on blending methods, Jean-Francois Decroix has managed to create a 'natural' cognac with the flavours of former days.

A cognac which respects the beauty of nature and the magic of life.

Church of Saint-Sulpice

The church of Saint-Sulpice de Chillac was built in the 12th century. A visit to this church is of particular interest as it is located just a stone's throw from the Château de Chillac. That's two monuments for the price of one!
Although apparently well-preserved, the monument was severely damaged during the Hundred Years' War. A complete restoration was necessary in the 15th century.



Three storeys are visible from the outer façade. Strong gothic buttresses serve to reinforce the structure.

Saint-Martin Church

An early church, built in the late 11th or early 12th century. Wall paintings in the choir and traces of them in the rest of the church are still present. They are in a remarkable state of preservation.
These drawings evoke floral decorations, but also angels, saints and coats of arms.



The southern wall of the nave and the western façade date from the 17th century, following the destruction of the Wars of Religion. On the other hand, the vault of the nave, in brick, dates from 1844.



The monument is classified as a "Monument Historique".
